Love to Eat Locally

Although the Canary Melon is considered an exotic fruit we are lucky enough to have it grown here in California.  Its beautiful vibrant yellow rind will capture your sight and arouse your curiosity for what lies beneath.  My curiosity and excitement got the best of me; I did not hesitate to slice it open and was very pleased to discover its dazzling blend of white and green flesh.  Its flavor is mildly sweet, a bit tangy with a pear like texture, yet extremely juicy.  After consuming almost the entire melon I came to one conclusion…absolutely refreshing!!!

                Not only is this unique melon decadent in flavor but also packed with nutrition.  The Canary Melon is low-fat, low in calories and a good source of fiber to aid in a healthy digestive system.  Two other much needed benefits include vitamin A for healthy eyes and vision, vitamin C for tissue support and healthy skin.  These benefits make this fruit a much needed essential to anyone’s diet.   More details on the Canary Melon or recipe ideas can be found on TIMptations weekly newsletter  for July 6, Volume 160 www.timptations.com/letter
